The things I get myself into...

I'm stressed. Big time. I'm in the process of applying to nursing schools and it has about driven me insane. I'm writing this so that anyone who asks about it can just read it and I don't have to repeat myself 800 times. Plus it'll feel good to just get it out.

I took the TEAS yesterday. I got an 81, which my advisor said was a really good score since they've came out with the new test this year (the national average is a 68.9). The thing is my GPA is kind of low (2.9) for nursing. She said normally she wouldn't tell someone to retake the TEAS, but in my circumstances, every little bit can help. The scores are averaged though (and
it's $50 to take) which makes me nervous. But I don't want to be 4 people out of the admitted group and say, "Well what if I had just taken the TEAS one more time..." So I'm pretty sure I'm going to retake it. Ugh. She plugged in my GPA and grades and stuff, and said that going on last year's Fall admitted group, I would not have gotten in. Spring, more than likely. I REALLY do not feel like waiting until Spring of 2012 to start nursing school. I should have graduated this semester as it is. I JUST WANT TO BE A NURSEEEE.

So I've been looking into backup schools. One being Macon State. I've been checking their website continuously for the last few weeks and it has been consistently saying that the applications for Spring '11 are closed...check back later for Fall. Well, I look today and the applications are due for the school (including transcripts from my 2 previous colleges) by February 1st. Holy freaking crap. SO I submitted that app today, and my 2 transcript requests. I'm praying to GOD that they get there by Feb 1. Then I have to apply for the program by Feb 15. This all got thrown on me in about 15 minutes. I don't know what I'm going to do if I don't get in to either. Or if I don't even get the chance to apply to Macon.

I'm going crazy and I just really need prayers or something to tell me I'm doing the right thing.

Thursday Five 1/13!

This feels like it has been THE slowest week EVER. It's finally Thursday, which means it's finally almost Friday. I spent most of the week iced in my apartment, waiting to see when classes would start. Oh, what fun! Regardless, here are things that made me feel...

Happy!
I was happy to have my winter break extended 3 days! :D Yay for snow and ice!

Jubilant!
I've already lost 2ish pounds since I started eating less and eating healthier! Once I get back into the swing of going to class, I'll be working out too! So excited to finally stick to this!

Grateful!
I'm grateful that we never lost power with all the ice we had! That's the big problem in Georgia. Our trees can't handle weight from ice and snow and they fall on power lines and cause power outages! But we never lost it, thank God!

Loved!
My sweet, sweet husband brought me home a dozen pink roses Saturday! It was our 3 month "anniversary". They're so pretty and they smelled good too!

Thankful!
I'm thankful that next Thursday I will be getting my student loan and hopefully money worries will be gone for a while!! One more week!

"Make it work."

I think I have decided that's my moto for 2011. I'm once again trying to lose weight and I started about last Thursday, and I've lost 2.8 pounds so far! It was jump started by a sore throat, which made me feel like eating nothing, so I took advantage of it! The stomach shrinkage began and I've been trying to stick with it. I've been eating a lot less, and healthier things. I don't think I've had anything fried since Thursday! I'm pretty proud. It means more effort on my part (cooking at home a lot more), but that's okay by me if it means losing weight! Do I feel like I'm starving 75% of the day? Yes! lol I'm hoping that gets easier as I get used to eating the smaller portions. It sucks though! But as Tim Gunn says, "Make it work!" and I'm determined to do so this time!

On another note - northern Georgia where my dad lives got like 5-8 inches of snow! I'm PISSED! It's to freaking warm here and we just got ICE. And lots of it!! Brandon was off work yesterday, thank God, and my school cancelled yesterday and today so I've been cooped inside. It took like 20 minutes to get the ice off his car this morning though, and it was thick! Here are a couple pics so you can see:

Icicles!! Pretty!

Looks like snow. WRONG. It's super thick ice.
That's all I've been up to lately! No class for me tomorrow, so maybe the semester will start on Thursday!

Hungry Jack Casserole Recipe!

I mentioned a few posts ago that I want to learn how to cook more stuff and expand my recipe collection! Well I got this recipe from a fellow Marine wife and I thought I'd share it with you all! All *50* of my followers!! Yay!! This casserole is super easy to make, affordable and VERY yummy!!

Start out by browning a pound of lean ground beef.

These are the next ingredients you'll mix in with the ground beef. The recipe also calls for a tsp. of minced onion. I couldn't find it at the store, so I left it out. I'm not crazy about onions anyway, so I thought it tasted fine without it. If you like onions, go for it!

My quality control inspector verifying the ingredients.

And begging for the attention I was paying to the cooking!

Alright, now you'll add...
3/4 c. Kraft BBQ sauce
1 15 or 16 oz. can of pork and beans
2 Tbsp. brown sugar
Stir until combined and heat until bubbly!

Next, you'll pour the contents of the pan into a casserole dish. I used a deep 8x8 glass Pyrex dish and it fit nicely!
Then you'll take a container of canned biscuits and 1 cup of shredded cheddar cheese and top the casserole.

Just cut them up and arrange them the way they fit best.

And top with the cheese!

Bake at 350 degrees, until the biscuits are done! It only took mine about 15 minutes.
Here's my result:

It was super yummy and I'll definitely be making it again soon! Here's a link to the recipe if you'd like to print it!
